Activity completion is a setting which, when enabled, allows the teacher to set completion criteria against an activity. A check (tick) appears against the activity, and this changes style when the activity has been completed.  The activity may be classed as completed automatically if the student has fulfilled certain tasks, or the student may be allowed to mark it complete manually.

Activity completion allows the teacher to set completion criteria in a specific activity's settings. A check (tick) appears against the activity when the student meets this criteria. The criterion might be viewing, receiving a certain score or a student marking it as complete.

Site administration > Advanced settings > Course completion must be enabled on the site.

Note: If "Conditional access" (Conditional activities) has been enabled in advanced settings, the teacher will see the "Activity completion condition" under the Restrict Access settings of an activity. However, it is possible to track activity completion without using the Conditional activities. And both can be used together.
