An authenticated user is someone who has logged onto the Moodle site. Their user name and password are recognized by the Moodle server.
The default role for all logged in users is Authenticated user. This default can be changed in Settings > Site administration > Users > Permissions > User policies).
A user will then have different roles as well as the Authenticated user role according to where they are in Moodle. For example, in one course they might have the role of Student while in another they might be a Teacher.
