Before I deleted it, the previous page said that category enrolments were a legacy feature of Moodle 1.9 and that the preferred way of doing things in Moodle 2 was to use cohorts. I deleted it because I cannot see a relationship between the two. Category enrolments allows us to enrol a user onto multiple courses while cohort enrolment allows us to enrol multiple users onto a single course. Ideally I would like to be able to enrol cohorts onto categories but I cannot get this to work (Sept 2011). Category-level enrolments are a legacy feature. When upgrading from 1.9 to 2, they are removed and replaced by cohorts. In addition, any category enrolments you make in Moodle 2 do not affect the courses in that category.
